How to make an Aperol Sour

Aperol is an Italian aperitif made from bitter orange, gentian root, rhubarb and cinchona bark (a key ingredient in tonic water). It displays much more subtle bitter flavours when compared to Campari, making this cocktail a great summer sipper.

Aperol Sour Cocktail Recipe


  • 60mL Aperol Aperitivo
  • 22.5mL Fresh Lemon Juice
  • 22.5mL Sugar Syrup (1:1)
  • Egg White


  1. Dry shake the egg white
  2. Add the remaining ingredients to your cocktail shaker
  3. Shake & double strain into a chilled coupe glass
  4. Garnish with a twist of grapefruit
